Carrot Bars!

In one bowl mix: 4 eggs
1 tsp salt
1 tsp soda
1 1/2 cup strained carrots or 3 sm bottles of baby food
(I always use the baby food!!!!)
2 1/2 cups sifted flour

In second bowl mix: 2 cups sugar
2 tsp cinnamon
1 1/4 cup crisco or veg oil
1/2 nuts (optional)

Mix together and bake on a 17 in by 12 in cookie sheet (sheet cake style).

30 minutes at 350 degrees

Now this cake is delicious but what makes the cake is the frosting!!!!

mix with beaters: 3 1/2 powdered sugar
1/2 cup butter
1- 8 oz cream cheese
1/2 TB vanilla

Mix till nice and fluffy!!!! Frost cake when completely cooled!

Easter Treats!

I Love Cakes!!! I am trying to get as many tins as I can, but I'm cheap so I'm watching for sales and great deals. I found this bunny tin at TJ Max for just $3.99, I was pretty excited about that! It's been in the cupboard for over a month and a couple of days before Easter I remembered that I had it, and I'm so glad I did. I think it turned out super cute!!!Here's the thing, I'm not a big fan of a cake from a box, but settle for them just to save time. I Usually spend all this time on my cake and I get tons of compliments, but when it comes to eating it.... well, there is nothing special about the taste, so a couple of pieces get eaten and then after it hardens and we looked at it long enough we throw it away.

For Easter I wanted a cake that would look really cute and we could eat it and enjoy it just as much. So I made a carrot cake, one of my mother-in-laws yummy recipes, with cream cheese frosting. Then when I added the coconut, oh my, it added a hole new taste to a great recipe! So I'd love to post the recipe but this is my first post to my new cooking blog! If I do get any followers any time soon that would like the recipe to my yummy Carrot Cake, let me know! I'd be happy to post it!!!
